Executive Chef Wanted At Ba Isago

DUTIES AND RESPONSIBILITIES:

  • Schedule and coordinate the work of Chefs, Cooks and other kitchen personnel.
  • Planning and design of menus for all dishes and pricing.
  • Approve requisitions of products and other necessary food supplies.
  • Ensure that high standards of sanitation, hygiene and safety are maintained throughout all kitchen areas at all times.
  • Establish controls to minimise food and supply waste and pilfering.
  • Prepare necessary data for applicable parts of the budget; projects annual food, labour and other costs and monitors actual financial results.
  • Cook or directly supervise the cooking of items that require skillful preparation.
  • Evaluate food products to assure that quality standards are consistently attained.
  • Develop processes, procedures and work instructions to measure and manage performance.
  • Provide training and professional development opportunities for all kitchen staff.

QUALIFICATION

Bachelor’s Degree (B. A.) from four-year College or university; and/or training; or equivalent combination of education and experience.

EXPERIENCE

The ideal candidate must have a minimum of 15 years’ experience in Hotels and Restaurants, Five Star Hotels including Fine Dining. Previous extensive experience in kitchen management, hygiene audits and opening and operating sizeable hospitality facilities is a prerequisite.

The ideal candidate must have background knowledge in, waste management programs, cost saving plans, Fine Dining including Functions, Conventions and Conferences on a large scale including Outdoor Catering.

SKILLS AND ABILITIES

  • Ability to engineer Menus for different types of Functions in line with Guest requirements.
  • Ability to train and motivate subordinates
  • Ability to interact positively with coworkers and the public to promote and maintain a positive and professional environment.
  • Ability to produce high volume of work in a timely manner, which is accurate, complete, and of high quality
